the holidays are just around the corner, and while our celebrations will surely look different this year, i am excited to amend our plans and establish new traditions. instead of splitting time between our loved ones, greg and i will celebrate—just the two of us—and virtually connect with family and friends. a festive and tasty cocktail (or mocktail) is just what we need to get in the holiday spirit.

i would like to preface this by sharing that mixology is not my strong suit. i prefer to follow a recipe that outlines specific ingredients and measurements. that’s exactly why i wanted to share two quick and easy drink recipes with you featuring cascade ice organic sparkling water. they are perfect to serve guests during—and after—the holiday season. a special thank you to cascade ice for providing the sparkling water used in both!

fizzy mimosa cocktail
while i love visiting local restaurants for happy hour, making drinks at home is far more convenient and budget friendly. (and in-person dining is currently closed in the greater seattle area.) enjoy the classic taste of a mimosa—plus a citrus twist—with this fizzy mimosa cocktail. it is the perfect refreshment to complement to your holiday brunch menu, whether you’re serving eggs benedict, a breakfast casserole, or french toast.
ingredients
serving size: two fizzy mimosa cocktails
1/2 cup of orange juice
1 sliced orange (to garnish)
1 cup of champagne or prosecco
1/2 cup of usda organic citrus twist
2 champagne flutes or wine glasses
directions
- slice orange in quarter-size bits and set aside for garnish.
- pour in 1 cup of champagne or prosecco between 2 champagne flutes or glasses.
- pour in 1/2 cup of orange juice—add more or less juice to taste.
- top both glasses with 1/2 cup of citrus twist.
- garnish glass with sliced orange.
- enjoy!
pomegranate mango fizz
colorful and festive for the holiday season, this pomegranate mango fizz is the perfect beverage to kick off any happy hour or social gathering. serve with appetizers or a meal. i recommend pairing with meat and cheese, a pomegranate and feta green salad, or bacon-wrapped scallops.
ingredients
serving size: two pomegranate mango fizzes
1/4 cup of pomegranate juice
2 tbsp of pomegranate seeds (to garnish)
6 tbsp of vodka (or 1 shot glass per drink)
1 cup of usda pomegranate mango
2 wine or martini glasses
directions
- pour 6 tbsp of vodka between 2 glasses. we used tito’s for this recipe.
- pour in 1 cup of pomegranate mango.
- top with 1/4 cup of pomegranate juice.
- add in pomegranate seeds to garnish.
- enjoy!
both recipes are delicious and can be served on any occasion. i look forward to trying additional beverages with cascade ice as a mixer, and they are equally tasty to drink on their own. i tend to crave something carbonated mid-afternoon, and a chilled glass of cascade ice sparkling water is flavorful and satisfies my craving. i also love that they are calorie free!
